Veggies 101

Growing up, I didn’t eat a lot of vegetables. (French fries don’t count!) My husband, on the other hand, a good, compliant child, would eat all the green things his mom put on his plate. In those days, veggies were often served simply heated from a can, maybe with bacon added for extra flavor.

We were both surprised when we discovered – not very long ago – that practically ANY vegetable can be deliciously prepared in a 375 degree oven with only three simple ingredients: salt, pepper, and olive oil. After you get good at it, you can experiment with other seasonings.

We have come to love our Ninja air fryer for roasting veggies. It’s so quick! And recently my daughter taught me a great lesson in convenience: you can even roast frozen vegetables such as broccoli in the Ninja. Prepare as you would fresh, and increase the cooking time to about 20 minutes. Buy plain frozen vegetables that don’t have added sugar and sauces.
